Watercress
Salad with Chilli and Grapefruit
Ingredients
1 bunch watercress washed and tops removed and set aside
1 Romaine lettuce
1 Ruby grapefruit peeled and segments separated
1 ripe nectarine cut into 8th's
1 small red chilli diced
2 tablespoons raspberry vinegar
1 tablespoons olive oil
Methodology
Whisk raspberry vinegar, chilli and oilive oil and set aside.
On each plate place watercress in the centre with sliced Romaine
lettuce. Next, place slices of nectarine and grapefruit. Pour
a little of the dressing over the top and serve as a starter.
