Ingredients
4 pears (1 per person)
4 tablespoons mirin
½ cup dry roasted chopped nuts
2 tablespoons chopped dried fruit
2 tablespoons tahini
1 teaspoon dry anise
2 tablespoons lemon juice
½ teaspoon sea salt
Methodology
Pre heat oven to 180oC. Cut pears in half & remove center core. Scoop out a little of the pear flesh & mix with all other ingredients in bowl. Spoon mixture into center of each pear. Wrap each half in foil, place into baking dish with one cup of water in bottom. Bake for 20 minutes.
Carob Sauce
Ingredients
1 tablespoon safflower oil
1 tablespoon whole wheat flour
1 tablespoon carob powder
1 cup soy milk
¼ cup maple syrup
1 teaspoon vanilla essence
Methodology
Warm oil in small saucepan. Mix in flour & carob powder & mix well. Slowly add soy milk, stirring constantly until thick. Add maple syrup & simmer for 2 minutes. Take off heat, stir in vanilla & spoon over pears.
