Legumes are often used in traditional fare in southern Italy. This is a wonderful combination of protein when cooked with pasta. Vegetables are always served to replace mineral content. Lentils are used for protein and fiber as an alternative to ground meat in lasagna. Lentils are high in phosphorus, iron and B vitamins. Lentils are used in India, Asia, Switzerland, Middle East and Northern Africa.

Bulgar risotto is made in Russia and is a delicious high fiber food. It is also a source of protein, B vitamins and high complex carbohydrates. Eggplant and natural yogurt are a source of protein and calcium for this region.

In Switzerland the lakes and rivers are home to a variety of fish. Rich in protein, vitamins A and D as well as phosphorus and iodine, fresh fish is quick and easy. Served with a variety of vegetables, the balance is achieved.
