Ingredients
2 cups apple juice
3 tablespoons agar agar
½ cup soy milk or rice milk
1 teaspoon vanilla essence
2 tablespoons maple syrup
2 mangos
Methodology
Place apple juice into small saucepan & bring to a boil. Turn heat down to medium & add agar agar. Stir until agar agar has dissolved & add vanilla essence. Remove flesh from mangos & layer into glass bowl. Pour dissolved agar agar over mangos & allow to set in refrigerator for 30 minutes. Once set cut into 4 or 5 pieces & place into blender with soy milk & maple syrup. Blend to a smooth consistency. Serve on its own or over fresh fruit.
