Ingredients
1 cup lima beans (soak beans for 8 hours in 3 cups water)
1 x 6" piece kombu
3 cups water
½ teaspoon sea salt
2 tablespoon olive oil
2 tablespoon lemon juice
2 tablespoon finely chopped chives
Methodology
Drain beans & place into saucepan with 3 cups water. Bring beans to a boil, then turn heat down & simmer for 1 hour. Add ½ teaspoon salt at end of cooking time & cook a further 5 minutes. Drain beans & set to one side. Make dressing by adding all ingredients into bowl & mix thoroughly. Pour dressing over warm beans & serve with long grain brown rice.
