Fruit Kanten with Fruit Mousse

Ingredients
5 tablespoons of agar agar or 1½ bars
4 cups apple juice
1 cup water
½ teaspoon vanilla essence
3 kiwi fruit
2 peaches
1 punnet strawberries
1 tablespoon tahini optional
½ cup soy milk

Methodology
Place apple juice & water into saucepan. Bring to a boil, turn heat down to medium & add agar agar. Stir agar agar until dissolved. Slice fruit & line large bowl. (Individual parfait glasses or bowls may be used). Pour agar agar mixture gently into bowl. When it has stopped steaming, place into refrigerator & set. It will become firm like jelly. Remove half of set mixture & place into blender, add vanilla essence, soy milk & tahini. Blend until mixture is creamy. When ready to serve, cut remainder into slices & place on plate. Serve with a spoon full of mousse on the side.
