Apricot Almond Cookies

Ingredients
1½ cups rolled oats
¾ cup whole wheat pastry flour
1½ tablespoons corn oil
½ cup chopped almonds
½ cup rice syrup or barley malt
½ cup apricots soaked for 30 minutes & then sliced
½ cup water
¼ teaspoon sea salt

Methodology
In mixing bowl combine oats, salt, flour & mix through. Next add oil & mix well. Add almonds, rice syrup, & water & gently fold mixture together. You should now have a lovely batter consistency. Spoon onto lightly oiled baking tray & bake for 20-25 minutes at 350oF or 180oC until cookies are lightly browned. Place on wire rack to cool before eating.
